Garlic Pasta

Low on motivation and energy, we needed to make dinner. Pasta appeared to be the easy winner, but butter and cheese wouldn’t do. We ended up with something delicious. WARNING: Do not eat this if you plan on kissing someone afterwards.

  • 1/2 lb spagetti
  • 1/3 cup olive oil
  • 1/4 cup roughly chopped parsley
  • 3 crushed/chopped garlic cloves
  • 1 tsp red chili flakes
  • Shredded parmesan cheese for garnish

First: cook the pasta for however long it says on the box. Once the pasta is al dente, pour it into a strainer and let it sit while you prepare the sauce. Save the pasta water!

Put the empty pot back on the stove over medium-high heat and add the olive oil. Once hot, put in garlic and chili flakes and let cook until golden. Add the pasta and mix to coat with oil and garlic. Add some pasta water if it looks too dry. Throw in the parsley, give it one more toss, and you have a flavorful meal in less than 20 minutes.

To keep it vegan, stop here, but we topped it with shaved parmesan and our simple shrimp recipe for a delicious and filling meal.
