With a grandma from Mexico, I’ve always grown up eating amazing food. And along with the food, there’s always salsa and this one just happens to be the best. This awesome salsa is good on basically anything. Throw it on some chicken, steak, tacos, or even eggs, and your meal is complete. You can also use it on our tostadas or chicken tacos al pastor!
What you need:
- 8 small tomatillos or 5 big ones
- 1/4 of a white onion
- A handful of cilantro
- 1/2 of a serrano chili (or more if you like it spicier)
- 1/2 clove of garlic
First things first, if you are living in the Eugene area, they sell tomatillos at Safeway. If you are in any big city, your normal market should have them too. They’re right by the serranos but if you can’t find them, just ask!!
So, this recipe is really easy. Peel the tomatillos under water to get rid of the stickiness under the skin. Once that’s done, halve the tomatillos (quarter the bigger ones) and throw them in the blender. Then, throw the white onion, handful of cilantro, serrano chili, and garlic in to the blender.
Blend it until there are no chunks and starts to look a little frothy. Now is the time to taste. If it’s not spicy enough add some more serrano and blend it again. If the spice is fine then add some salt, stir it up, and taste to make sure it tastes good to you!
