Grandma’s Chicken Tacos Al Pastor

In our last post I told you to keep your eyes peeled for a new recipe you can use the salsa in.. so here it is! Once again, we are going with Grandma’s recipe.

So two of my favorite flavor profiles are sweet and spicy and this recipe combines the best of both worlds! These chicken tacos are super simple to make and delicious to eat. Leave all the toppings on the side, let everyone put together their own taco and enjoy!

(This recipe feeds two)

What you need: 

  • 2 chicken breasts or 6 tenderloins
  • 1 tablespoon of paprika
  • 1/2 tablespoon of salt
  • 1 teaspoon of garlic powder
  • 1 handful of cilantro chopped
  • 1/2 white onion chopped
  • 1 can of pineapple rings
  • Salsa (store bought or home made)
  • 8 tortillas

So we’re going to break this up in to chicken then toppings.


In a bowl, combine paprika, salt, garlic powder, and mix. Pat dry the chicken and sprinkle on the seasoning mix. You want the the chicken to be seasoned all over (both sides), but not thickly covered. You should have leftover seasoning! To cook the chicken, follow our recent recipe on how to bake it. Skip the seasoning steps and go straight to the baking. Once it’s done, let it sit for a few minutes and then cube it. (Make it vegan by using tofu! Follow the same steps but bake for 30 minutes!)



For the cilantro and onion, chop it up and put them in bowls. Bam, easy. For the pineapple rings, take about 4 or 5  of them, cut them in to cubes and put them in a bowl without the juice. For the salsa you have a few options. Buy your favorite salsa and use that, or go the extra step and make your own! Follow our recipe for an awesome tomatillo salsa, or even opt for a classic pico de gallo. Any salsa you choose will be the perfect finish for your tacos. Warm the tortillas in a dry pan. About 4 at a time for 1 minute on each side should do the trick.
