It has recently become sunny again in Eugene (ah!!!!!!) and this bright smoothie is perfect for the weather!
What you’ll need:
- One sliced banana
- Large handful of frozen mango
- Large handful of frozen peaches
- Larger handful of spinach
- One small cucumber or 1/5 of a large cucumber (peeled and sliced)
- 1/3 cup almond milk
- 1/3 cup greek yogurt
- 1/2 lime
If peaches and mangos are in season, go ahead and use them fresh, but then freeze a sliced banana the night before you make this. You want at least one of your fruits frozen to make this smoothie creamy and cold. Also, substitute greek for vegan yogurt to make this an awesome vegan option!!
