Roasted Asparagus

When asparagus is in season I can’t wait to get my hands on it! This super easy recipe is a perfect side dish for any protein. What you’ll need:

  • 5 stalks of asparagus per person
  • 1 tablespoon of olive oil (add in 1/2 tbsp increments per additional serving)
  • Salt
  • Pepper

Well, let’s talk about storage. Cut off an inch from the bottom then put in either a plastic bag or cup with an inch of water (leave the rubber band on). Now, put your oven to 375. On to cooking. First things first we need to take off some of the end. The best way to do this is to snap if at it’s natural point. Hold the asparagus at then end with one hand, and somewhere near the bottom/middle with the other, and bend until it breaks. If they are on the thicker side you’ll want to take a vegetable peeler to the stalks so they aren’t so woody.

With that done, put on a cookie tray, cover with olive oil, salt and pepper, and toss with your hands. When the oven is ready, put them in for about 15 minutes and they are ready to eat!IMG_7919
