This yummy recipe is a perfect recipe for summer. It is light, healthy, easy and delicious.
What you’ll need:
- 1 tbsp olive oil
- 3 large handfuls of cherry tomatoes
- 4 cloves of garlic smashed
- 1 tsp dried basil
- 2 filets whitefish
- Salt and pepper
- 1 lemon or lime
Preheat your oven to 425 degrees.
In either a baking sheet or pyrex dish (I used my pyrex because it is smaller so the tomatoes are less spread out) put olive oil, smashed garlic and whole cherry tomatoes. Before you put the dried basil in, crush it in your hand to really release the flavor. Bake this for 15 minutes.
While that’s baking, its time to prep the fish. Pat it dry and season both sides well with salt and pepper. When the 15 minutes are up, place the fish right on top of the tomatoes and put it back in the oven for about 8 minutes.
