This lazy, and less smelly version, of egg salad changes things up but also keeps the great yummy flavor of egg salad. The softness of the eggs and crunchiness of the bread make the perfect snack.
What you’ll need:
- 1 hardboiled egg
- 1 slice of sourdough bread
- 1 tbsp mayo
- 1 tbsp shredded parmesan cheese
- 1 tsp crushed red pepper flakes
- Salt and pepper
To make hardboiled eggs, put eggs in a pot, cover with cold water and salt. Put over medium-high heat. When it reaches a boil, turn off the heat and cover the pot. Let sit for 11 minutes. Immediately pour water out of the pot and cover eggs with cold water to stop the cooking. I like to make hardboiled eggs at least 4 at a time and they last up to a week shell-on in the fridge.
Toast the slice of bread to your liking. Once its done, spread mayo on it. Slice eggs and place them on bread. Sprinkle with cheese, pepper flakes, salt, pepper, and enjoy!
