Hello everyone!!! I’m back!!! Mark is in Prague, but I’m back!After being in Denmark for 6 weeks and sharing a tiny kitchen with 6 people its SO GOOD to be cooking in my kitchen again. I’m also so happy to be sharing recipes again! So here’s the first one of the year and I hope you enjoy it! This recipe is fairly easy which makes it a great way to get back in to cooking for the beginning of the school year!
What you’ll need:
- 1 cup cheese tortellini (I bought the dry target brand)
- 2 smashed garlic cloves
- 1 cup sliced mushrooms
- 1/2 cup fresh peas
- Marinara sauce (to your liking)
- 1 tbsp butter
- 1 cup parmesan

We’re gonna talk about marinara sauce. My family’s favorite sauce is Victoria White Linen Marinara. We get it at Costco in large jars and packs of two (apparently you can get it at Walmart as well). This is our favorite because if you read the ingredients, 99% of them are natural and none of them are sugar! It’s probably the best jarred sauce. Also with so much you can store the unopened jar in your pantry for a while, and freeze the one you have opened. You’ll have marinara for dayzzzz.
Okay, so first things first you’ll want to boil your water. Make sure it’s “as salty as the sea.” At the same time, put a separate pan on medium high heat and everything will eventually end up in. When the water is boiled add your tortellini and cook for one minute less than the box says. Also at this time add your butter, garlic and mushrooms in to the other pan. Also also (looks like you’ll need three hands for this one) heat your marinara in a separate sauce pan.
Season the mushrooms with salt and pepper around 5 minutes in. When there is about one minute left with the pasta, add the peas to the mushrooms and season again. When the pasta is ready, drain it but make sure to save some pasta water. Add the pasta and half of the cheese to the mushroom and peas. Stir and add as much sauce as your heart desires. If it looks a little thick add some of the starchy pasta water (about and 1/8 of a cup at a time. You can always make it thinner but you can’t go back). Add the rest of the cheese and enjoy!

- PS! You can use frozen peas as well. Just make sure they are thawed and add them about 3 minutes after you add the mushrooms.
