White Bean Dip

I love dips. I also love white beans. So I figured “por que no los dos?” (If you understand that reference, high five). This recipe is super simple and super versatile. Enjoy!

What you’ll need:

  • 1 can white beans
  • 1/4 cup olive oil
  • 1 garlic clove
  • 1 lemon
  • Cayenne pepper
  • Salt and pepper

First thing you’ll want to do is drain your beans. Most recipes would call for you to rinse them, but I like the flavor it brings. Just shake them a little to get most of the liquid out.IMG_0406

After this, it really couldn’t get easier. Add beans, olive oil, and juice of half a lemon to a blender. Next add salt and pepper. It’s okay if you under-season it, you can always fix it. Lastly, add a pinch of cayenne. You’re not doing this to make it spicy, but just to add a little extra flavor.IMG_0408Next you’ll blend it all up. If it is too thick that the blender stops blending it, thats okay. If you want it thinner add a little more olive oil and blend again. I liked how thick mine was so I left it. You’re definitely going to want to try it at this point to check if the seasonings are to your liking. I added more lemon and more cayenne, but maybe your’s is just right! Since it was too thick to blend, I just took a spoon and mixed it up for a last time. IMG_0409

Now you can either serve it at room temp or let it cook in the fridge! Serve with toast, veggies, or whatever your heart feels like dipping. Try it out and enjoy!IMG_0410
