Ducks that Cook – Guest Edition!

So for the longest time my friend Ethan has asked if he could post a recipe on Ducks that Cook. After back and forth for a few months figuring out what he would do, he sent me this awesome recipe that I can’t wait to share with you! (Also shout out to Harrison for making this with him)

Ethan’s Israeli Salad (FYI this makes a lot, so get ready to share!)

What you’ll need:

  • 6 diced cucumbers
  • 4 diced plum tomatoes
  • 5 sliced green onions
  • 1 seeded and diced red bell pepper
  • 1/3 cup chopped garlic
  • 1/2 cup fresh mint leaves minced
  • 1/2 cup olive oil
  • 2 tbsp fresh lemon juice
  • Salt and PepperIMG_8003

This super fresh recipe is actually incredibly easy to put together. Add everything that is chopped, diced, or minced in to a large bowl.IMG_8010

Mix that together then drizzle oil and lemon and toss! Season with salt and pepper until it tastes good and there you go!IMG_8008

Simple and fresh. Perfect to bring to a potluck or just have a bunch of in your fridge to eat all day!
