Roasted Butternut Squash

As I promised in my last dish, butternut squash pasta sauce, we would roast the rest as a yummy veggie side dish!

What you’ll need:

  • 1/2 butternut squash (cubed)
  • salt
  • pepper
  • 2 tbsp olive oil

Preheat Oven to 425

So if you made the last recipe, your squash should already be diced up. If not, watch this awesome video on how to do it. IMG_0546

Now it is stupidly easy. Sprinkle with salt and pepper, drizzle with oil, put on a baking sheet, and bake for 40 minutes. IMG_0548
