Tortellini in White Cheese Sauce

Okay so… this might not be the healthiest recipe I’ve ever posted on here, but it sure is delicious. Enjoy this on a cheat day or just when you want to have something nice and indulgent!

What you’ll need:

  • 4 tbsp flour
  • 4 tbsp butter
  • 1 and 1/2 cups of milk
  • 1 cup parmesan cheese
  • A few drops of tabasco
  • Salt and pepper
  • Packaged Tortellini
  • Handful of asparagus

First in a large pot, bring salted water to a boil.

In another pot we’re going to start our roux (pronounced like Roo…like the character in Winnie the Pooh) the base for our white sauce. Over medium heat add butter. Once melted, add the flour and whisk until a paste forms. Keep whisking it until the color starts to turn darker and it bubbles. A lot of recipes like you to do this for about 20 minutes, but I find for this recipe that 5 minutes works.

The lightning in the picture is uneven, but your roux should be the color that it is in the lower section of my pot.
At this point, add 1 cup of milk, but only a quarter cup at a time. Whisk constantly because if you don’t your sauce will turn out lumpy, and nobody wants a lumpy sauce. After 1 cup of milk has been added, add the parm and whisk. At this point its up to you if you want to add more milk or not. Mine was too thick for my liking, so I added the rest of the milk. Add a few drops of tabasco just to give it a little kick, and salt and pepper to taste. Once everything is mixed in, cover and take off the heat.IMG_4290.JPG

By now your water should be boiling. If not, you should probably get your stove fixed. Add your packaged tortellini and set your timer to 3 minutes less than package time. While thats going, cut your asparagus in to 3rds or 4ths. When the timer goes off, throw the asparagus in the water and cook for 3 more minutes.

When your pasta and asparagus are done, drain and immediately add to the sauce. Stir so everything is coated, serve, and enjoy! 🙂
